Yields 10 people

To make the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Premix (makes 850ml, serving 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

To prepare the Cordial: Place the listed components into a saucepan, heat until it reaches a gentle boil, mixing until the sugar dissolves. After that, turn off the stove allowing it to cool down entirely. Decant into an sealable bottle, close it and store in the refrigerator, it will last for around a month.

For the Batch Mix: Mix the specified liquid ingredients into a big jug, let it rest for an hour, then filter it best through a fine cloth, to ensure it's perfectly clear.

When ready to serve: Add 85ml of your batch mix to a stirring glass filled with ice, gently stirring gently for one minute to cool it down. Pour to a frosted cocktail glass or equivalent, top with the cranberries and complete it by giving it a light spray of mandarin oil above the glass.
